Simon BV p.15. First published in 1752 as a much shorter work of 102 pages.

The second - greatly expanded edition - of one of the most important French books on viticulture.

Following the publication of the first edition of this work in 1752 Bidet spent an enormous amount of time visiting vineyards in France gathering knowledge from the actual working people who tended the vines. This second edition is more than eight times the length of the original and is a comprehensive encyclopedia of French wine production. The first edition concentrated largely on the viticultural methods of Bidet's native Champagne region, but this present edition is far more wide ranging and compares methods used across France. Bidet was also sommelier to Marie-Antoinette.

The highly detailed plates illustrated the various different types of apparatus required in the winemaking process.
